iOliva is defined as a highly prestigious Extra Virgin Olive Oil, a green olive juice produced from the best fruit harvested at our family olive groves, located in a privileged enclave: the Subbética Nature Park.

The experience and tradition passed down since 1878, combined with the strict protocols used in the production of this EVOO (land preparation, early harvest, cold extraction, etc.), make iOliva a complex EVOO with exceptional organoleptic characteristics.

Our Hojiblanca olive variety is harvested at its optimal point, not to obtain the highest quantity of oil, but to extract the maximum aromas and polyphenols (antioxidants). This, along with a cold extraction at 21-22°C, makes this "Special Family Estate Selection" EVOO a completely unique and special product.

Extra Virgin Olive Oil

Early harvest (formerly known as "first press") obtained from the first olives harvested in October. An extra virgin olive oil that's fresh and presented unfiltered during the early months of the harvest, later filtered for optimal preservation.

Hojiblanca Variety

Its aroma evokes the sensation of entering a garden, with hints of green tomato plants. The herbaceous scents are reminiscent of a dawn walk through a field surrounded by fresh grass, bringing to mind nature, mountains, and Mediterranean notes.

Tasting Notes

In terms of taste, it's a well-balanced oil with prominent notes of tomato and green almond. It has a slight bitterness with a progressively developing chili pepper finish.

Aromas and Flavour

Thanks to its intense flavor and health benefits, it's an ideal oil for raw applications (toast, salads, tartar, carpaccio, sauces, and finishing dishes with fish, meat, and vegetables...).
