The experience and tradition passed down since 1878, combined with the strict protocols used in the production of this EVOO (land preparation, early harvest, cold extraction, etc.), make iOliva a complex EVOO with exceptional organoleptic characteristics.
Our Hojiblanca olive variety is harvested at its optimal point, not to obtain the highest quantity of oil, but to extract the maximum aromas and polyphenols (antioxidants). This, along with a cold extraction at 21-22°C, makes this "Special Family Estate Selection" EVOO a completely unique and special product.
